There are so many things to celebrate in February…..Valentine’s day of course is the first thing we think of, aka the month of Chocolate. Be sure to choose dark chocolate, asks the nutritionist, because it’s also Heart Health month. Black History month is another one. But, did you know there were special days in February too? Honorable mentions include National Freedom Day (Feb. 1), Read in the Bathtub Day (Feb. 9)– library books are not recommended, Make a Friend Day (Feb. 11)–meet a new one or do something nice for an existing one, Love your Pet Day (Feb. 20), Single Tasking Day (Feb. 21)–focus on doing one thing at a time instead of multiple things (huh, being in the moment–a novel concept), and Public Sleeping Day (Feb. 28)–finally, a day we can feel no guilt about taking a nap.  But here’s my (new to me) 2 favorite days in February:

Feb 17th–World Human Spirit Day. At 3 pm Eastern Time, on this day people all over the world will observe two minutes of silence to reflect upon the idea that we are all human beings together here on Earth, sense our connection to one another, and help bring more peace and harmony to the world!

AND

Feb 22nd–World Thinking Day! This day was originally created for Girl Scouts to do kind things for one another. It’s evolved into one that encourages us to think about our health and teach things that benefit our health.

I’m starting early. Celebrate all of the above as they’re sure to do good things for your heart…..and

Fiber up!  Boost Your Immunity!  and Move!!  Fiber, antioxidants and exercise reduce the risks of heart disease, high cholesterol, high blood pressure, diabetes, cancer and more. Consume at least 25 grams of fiber per day from yummy, high antioxidant and immune boosting containing foods such as apples, berries, beans, whole grains, veggies and nuts.

Enjoy celebrating your health with this recipe:

Fruit and Nut Bark

3/4 cup dried cherries

1/2 cup unsalted pistachios

1/4 cup finely shredded coconut

1/4 cup chopped crystallized ginger

8 oz. dark chocolate (70%), broken into chunks

Line a baking sheet with parchment paper and chill thoroughly. Combine ingredients (except chocolate) in a bowl-mix to combine. In a double broiler, melt chocolate over simmering water until melted. Stir in half of the nut/fruit mixture, spread onto baking sheet. Using a spatula, spread mixture evenly. Pour remaining nut/fruit mixture on top, chill completely (20 minutes). Break into pieces. Store in an airtight container in refrigerator.
